As I’ve cut out diary for the last 6ish months, I wanted to make a dessert that I can eat, so here is my vegan friendly diary free spiced rice pudding similar to Indian Kheer.
Adding coconut milk was a great addition as the cinnamon with the coconut gives it a beautiful flavour and the lemon gives it that tazz! I actually loved this dessert, it really made my Diwali meal that extra indulgence! Using italian rice was such a great idea, as made the rice pudding light and delicious with big fat grains of rice.
100g Arborio Rice
300ml Coconut Milk
2 Tsp Vanilla
50g Raw Sugar
1/2 Tsp Lemon Zest
Add rice, water and cinnamon stick to a pan to bring to the boil
Simmer for 10 minutes until water is almost gone
Remove cinnamon stick and add coconut milk, vanilla, sugar and lemon zest to the rice
Stir well and bring back to the boil
Simmer for a further 10 minutes until the rice pudding has thicken up.
