Cauliflower Crust Pizza

Cauliflower pizza crust is a healthy way to get extra veggies into your diet without all the starchy carbs. This is a low carb grain free version of pizza and because of the egg whites instead of whole eggs it’s a lot lighter in calories.This meal is very low in calories and high in veggies so lots of nutrition and vitamins.

After going to Pizza Express I do love addingΒ  a little Rocket pizza, some how it enhances the flavour and makes you feel you are eating an even healthier meal.Cauliflower Crust Pizza

Ingredients
300g Cauliflower
3 Egg Whites
Pinch of Salt
Pinch of Pepper
Pinch of Mixed Herbs
1/2 Tsp Italian Herbs
2 Tbsp Tomato Puree
Sliced Mushrooms
Cherry tomato
jalapeno
Pizza Toppings of choice
Bell Peppers
Spinach
Light Mozzarella

Cauliflower Crust Pizza

In a food processor add raw cauliflower broken into pieces roughly.

Whizz in the food processor until crumbly.

Add egg whites and optional seasoning, I used salt, pepper and sprinkle of mixed herbs.

Blitz again until its turned into a paste.

On a Pizza stone spray with a little oil and spread the cauliflower mixture into a thin layer.

Bake in the oven at 200c for about 15 minutes.

Mix together the tomato purΓ©e and italian herbs and spread over the cauliflower crust base, then add the toppings of your choice.

Bake again for a further 10-15 minutes until the cheese has melted and browned slightly. Enjoy
