Have you ever had IHOP Pancakes before? Well they are fluffy and soft and well just awesome. So my turn to re-create this babies! It’s only taken me about one year of sunday pancakes to perfect the final recipe, and I’ve done it! Now to the point that these are too good and not helping with my weight-loss journey!
American and Canadian are made of thick batter contains eggs, flour, milk, and a raising agent such as baking powder. A known ingredient is buttermilk. Buttermilk is the liquid left over from churning the butter from the cream. Acidified buttermilk is made by adding acid to the milk usually lemon juice or vinegar and allow to sit until it curdles slightly usually about 5 minutes or so. You can buy in the supermarket but I tend to just use milk with vinegar as works just as well.
Pancakes is one things the Americans have got it right, I’m a pancake girl and so is my son, where are by husband and daughter prefer the crêpe style thin french pancakes.
I’ve made basic simple pancakes but you can add blueberries, chocolate chips or spices such as cinnamon or nutmeg to the pancakes to add additional flavour.
I’m hoping the photos will do some justice as these where very fluffy thick style pancakes, soft and indulgent, with a lashing of Aunt Jemima butter syrup you can’t wrong.
1 Tsp Vanilla
2 Tbsp Oil
1 Tsp Baking Powder
1/2 Tsp Salt
1/2 Tsp Baking Soda
2 Tbsp Sugar
225g Plain Flour
Measure out some buttermilk, if you don’t have any buttermilk then use milk with a squeeze of lemon juice or dash of vinegar and allow to sit for a few minutes.
Add oil, eggs and vanilla to a bowl and whisk together.
Pour in the buttermilk and re whisk together.
Add flour, baking powder, baking soda, sugar and salt to wet ingredients.
Whisk every thing together just enough to make sure there are no lumps.
Heat a flat griddle pan over medium heat and spray with a little oil, add a little batter and allow to cook, you will see little bubbles appear on the surface.
Flip over and cook the over side of the pancake until golden brown.
Serve pancakes and enjoy with toppings and syrups of your choice.
