Now everyone loves a piece of carrot cake, but how about a carrot cake but in a cookie?! Well here it is, a cookie inspired with carrot cake flavours, with carrots, raisins, cinnamon and ginger. Now I guess I could have topped with a little cream cheese frosting to give it the total carrot cake feeling, but as I was going to try keep them a little healthier I opted to keep them plain.
I love getting creative in the kitchen, looking at different recipes and seeing what I have in the home and then adapt and change bits and bobs to get to a good recipe. Some how it comes naturally to me to play with ingredients. I was looking through my Humming Bird Recipe book and seeing how I could adapt my go Carrot cake recipe and what I could do to make it into a cookie instead of cake.
I guess you could argue that these cookies could be part of your five a day, well there are a few carrots within these cookies, but you may need to have few to get to the five a day quota.
These cookies have that similar look and feel to carrot cake where by you can see the gorgeous orange flecks from the carrots and the raisins help with the delicious chewy texture.

Ingredients:
120g Soft Butter
160g Brown Sugar
1 Egg
1/2 Tsp Vanilla Extract
200g Plain Flour
150g Oats
200g Grated Carrots
1 Tsp Cinnamon Powder
1/2 Tsp Ground Ginger
1/4 Tsp Salt
1 1/2 Tsp Baking Powder
100g Raisins
Instructions
Add butter and brown sugar to a mixing bowl.
Cream together on medium speed until light and creamy.
Add and egg and vanilla and beat again.
Then add carrots, flour, oats, raisins, baking powder, cinnamon, ginger and salt.
Mix for a further minute until fully combined.
Add a heaped tablespoon of batter to a greased baking tray.
Bake in the oven for 12-14 minutes and then allow to cool on a rack.
