These little cakes are light and fruity! The will make a great eleven am coffee and cake treat or paired up with an afternoon cuppa tea. You  can actually freeze these Fruity Chocolate Squares for use in later weeks or months. My husband and parents love a bit of fruit loaf so its nice to make a batch and store half in the freezer to take in a few weeks to ration the cake consumption!

You could add any dried fruit into these light bars such as apricots, sultanas, craisins and even dates. The addition of a hint of chocolate definitely adds a little more naughtiness to the cakes. IMG_5551

This light cake has hidden prunes in it, I say hidden as some people will turn their noses up at the laxative compound within the prunes. Now let’s be clear the few prunes that go into this cake will definitely not make you going running, however prunes are known for the high antioxidant content which is a great plus point. To get a proper laxative or constipation remedy you would need to eat at least 300g to even get a remote effect.  IMG_5549
