From my visit to the Cake and Bake Show ( Click to link to see my review and day), I had some of the Billingtons cookies which were amazing. As the recipe was on the box of the sugar I got, I thought I would try it out. I would definitely rank these babies high up their on my best cookie recipe!
80g Billington’s Unrefined Golden Caster Sugar
80g Billington’s Unrefined Light Muscovado Sugar
135g unsalted butter
1 large egg
1/2 tsp vanilla extract
190g plain white flour
1/2 tsp salt
1/2 tsp bicarbonate of soda
100g dark chocolate chips
Add butter and sugars into a bowl
Cream together the butter and both sugars until pale then add the egg and vanilla extract and mix together well.
Sift in the flour, salt and bicarbonate of soda and add to the butter sugar mixture and mix thoroughly until a dough forms. Mix thoroughly until a dough forms.
Stir in the chocolate chips. Spoon one tablespoon in size and place on a greased baking tray leaving about 5cm space between each to allow for them spreading out during baking.
Place in the oven and bake for 10-15 minutes or until the cookies are light golden brown. Enjoy!
