2 egg whites
100g Plain flour
3/4 tsp Baking soda
1 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Salt
1 1/2 tsp Vanilla
75g Brown flour
2 tbsp light Olive oil
Separate the egg white and whisk until stiff peaks
Add honey to a bowl.
Then add flour, baking soda, cinnamon, nutmeg, vanilla, sugar and salt
Add oil and mix
Add mashed bananas to the mixture
Mix well with a spoon
Add whisked egg whites
Folding in slowly until mixed
Pour into a greased or lined loaf tin
Bake in the oven at 170c for 35-40 minutes
