Healthy Eggless Potato Salad

For someone who really likes potato salad special flavoursome creamy ones, it seems like FOREVER since I last had some. At least over a couple of years, but even before going vegan. Sometimes you need a little comfort creamy potato salad without laden with hundreds of calories, BBQs would right unless there was a bit of potato salad, this is the slimming world / weight watchers friendly potato salad.

Creamy full of flavour chilled potato salad just goes well with a yummy crisp salad with some baby plum cherry tomatoes. Although I know my hubster would say it goes perfectly with a meaty burger and chips!

Yogurt is a perfect none mayo alternative with the great creamy taste without the extra calories from the oil in mayo. Using a dairy free yogurt like coconut yogurt reduces calories and is rich in nutrients like B12 and Vitamin D.

Advantages of using yogurt instead of mayonnaise is that the potato will keep well in the fridge for about 3-4 days unlike egg based mayo. This recipe takes very little effort to throw together, not more than 20 minutes from start to finish. Now the longer you leave a potato salad to chilli in the fridge the flavours with intensify.

You could add some more veggies like peas and sweet potato to give it a little more colour. Did you know we tend to eat food that are appealing to the eyes first as oppose to taste, so why not make your dishes are little more colourful. img_0529

Ingredients
2 Medium Potatoes
1 Large Carrots
2-3 Spring Onions
3 Tbsp Greek Yogurt or dairy free yogurt
1 Tsp Parsley
1 Tsp Mixed Herbs
1/4 Black Pepper
1/4 Salt

Instructions

Peel and dice up the medium potatoes.

Peel and chop the carrots, with potatoes and boil for about 8-10 minutes until just tender.

Drain the carrots and potatoes and rinse with cold water.

Add the potatoes, carrots and chopped spring onions into a bowl.

Add yogurt either greek or non diary, parsley, mixed herbs, pepper and salt to the bowl.

Stir well and serve either at room temperature or chilled.
