Imagine a KitKat cupcake, what would you think it be like, here is my view of the KitKat in a cupcake. Soft sponge vanilla covered in creamy chocolate frosting and of course a KitKat stuck on top and all of this does need to be in a red and white cupcake case just to keep with the theme.
Part of my dads 65th birthday celebrations he wanted to cupcakes to take into work, so happily I said yes and asked how many he wanted and what he wanted, he replied with anything you would like to make! Which was my favourite answer, which means I have free range on it. Quickly thought, then came up with the chocolate bar theme, which consisted of his favourite chocolate bars like Bounty, KitKat and Fruit and Nut!
I guess you could easily swap the vanilla cake and chocolate frosting to a chocolate cake and vanilla frosting…But having the creamy chocolate frosting just sounds better, do you think?
I love and the enjoy the creativity of baking, as you can just make it your own, adding in little bits of your little world into cakes, and when there is no pressure and you are allowed to have a completely blank canvas you almost become more creative.
I ended up using a whole KitKat finger in each cupcake which I think just adds to these little tiny cakes, specially to set the scene. They are no caption needed type cupcakes.
When I asked my dad how they went down at work, and his response was that they didn’t last long so they must be good!
I did end up keeping 1 behind for the kids to have, and they ended up sharing with the Hubster and they were literally arguing over the biggest 1/3 of the cake and who gets the KitKat bar on top, so as the mum and referee I opened another KitKat and gave them all a finger each! That stopped the chaos.
Ingredients:
Cake:
6oz Margarine
6oz Caster Sugar
3 Eggs
1 Tsp Vanilla Extract
8oz Self Raising Flour
Frosting:
3oz Butter
1 Tbsp Milk
1oz Cocoa Powder
8-10oz Icing Sugar
3 Kitkat Bars (4 Finger)
Instructions:
Add margarine and caster sugar to mix bowl
Beat together with an electric mixer or by hand with a wooden spoon until light, soft and airy.
Add the eggs and vanilla to the mixture and beat the batter.
Add self raising flour and mixture for about 1 minute until light and creamy.
Scoop into a muffin case
Bake in the oven for 20 mins at 170c and allow to cool
Mix beat together the butter, icing sugar, cocoa and milk until light creamy and when the frosting holds a peak.
Pipe the frosting over each cupcake and add in 1 KitKat finger cut into 2.
