Vegan Gluten-Free Oat Banana Loaf

This is one healthy no dairy, no gluten, no sugar, no eggs loaf perfect for the anytime snack full of goodness! It can be hard to find a vegan style loaf, and with a bit of dairy butter this load is divine.

Add the bananas and honey give the loaf a perfect amount of sweetness without actually needing any sugar. With everything in the news about sugar being so bad for you, this loaf takes it to the next level as there is no added sugar in the loaf at all – nothing but natural sweetness. Make sure you use a good ripe banana, as the green ones just don’t work well in a banana loaf.

This vegan gluten-free banana loaf also freezes well, just slice it up, and place in the freezer, and remove the night before to defrost and it’s like you just made another loaf fresh! Freezing bakes goods is the perfect way to portion size, as sometimes you feel like you eat it just for the sake of it before it goes stale, however freezing half a loaf then makes it just last longer and you can just take out a few slices at a time.

Living a plant-based diet over the last 14 months, I’ve come to appreciate a good healthy loaf like this, as usually vegan bakes are laden with sugar and flour which aren’t so great for the waist line. Adding the oats into this bake instead of using flour keeps this very GI Index friendly keeping you fuller for longer. 

Vegan GF Loaf

Ingredients
200ml Light Coconut Milk
1/2 Tsp Vinegar
75g Honey
1 Ripe Banana
250 Oats
25g Flaked Nuts
1 Tsp Baking Soda

InstructionsVegan GF Loaf

To a mixing bowl add coconut milk, vinegar and honey and mix well.

Mix in a mashed banana.

Add in the oats, flaked nuts and baking soda and mix well.

Add the batter to a greased loaf.

Bake in the oven at 170c for about an hour, then allow remove from baking tin and allow to cool.
