Halloween Cupcakes

My little muppets are off to a Halloween camp this year with Beavers and Cubs on Halloween. Usually the scouts ask for biscuits or cakes and so in my usual manner I decided to bake some treats.

Chocolate cup cakes with some children friendly Halloween sprinkles was the perfect idea!

According to WIKI, Halloween also known as Allhalloween is a yearly celebration observed in a number of countries on 31 October, the eve of the Western Christian feast of All Hallows’ Day. It initiates the triduum of Allhallowtide,the time in the liturgical year dedicated to remembering the dead, including saints, martyrs, and all the faithful departed believers. Within Allhallowtide, the traditional focus of All Hallows’ Eve revolves around the theme of using “humor and ridicule to confront the power of death.” IMG_4040

Recently out shopping I found some very cute Halloween cup cake cases with stick decorations – which went perfectly with my little idea of using green icing over chocolate cake.IMG_4037

This recipe made 24 cakes, which I do hope is enough for the campIMG_4036

Kids do love Halloween and making treats like these cupcakes all make it worth it.IMG_4048

Ingredients:
6oz Margarine
6oz Golden caster sugar
6oz Self Raising flour
1 1/2oz Cocoa
1 Tsp Vanilla
1 Tsp Baking powder
1/2 Tsp Salt
3 Eggs
175g Butter
600g Icing Sugar
Green Food Colouring
1 Tsp Vanilla
3-4 Tbsp Milk
Sprinkles

Using an all in one method, add the margarine, sugar, eggs, flour, baking powder, vanilla, salt and cocoa into a mixer.

Mix for approx 2 minutes on medium to high-speed.

Add a scoop of batter to each cup cake case

Bake in a pre heated oven for 15-25 minutes at 170c and allow to cool on a wire rack.

In a mixing bowl, add the icing sugar, green food colouring, vanilla and milk

Mix until forms soft peaks

Fill a piping bag with butter cream frosting and pipe on the cupcakes.

Swirl each cake with frosting

Add sprinkles to each cake and enjoy!
