55g Melted butter
200 vegetable oil
300g Caster Sugar
285g Plain Flour
2 Tsp Baking soda
1 Tsp Baking Powder
1 Tsp Salt
1 Tsp Cinnamon
1 Tsp Nutmeg
Grate the courgette
Add eggs and oil into a mixing bowl
Mix until the mixture is pale and slightly thickened.
Add the melted butter and sugar and mix.
Add the courgette
Mix the courgette and butter into the batter.
Measure out the flour, baking powder, baking soda, cinnamon, nutmeg, salt and add to the batter. Mix well.
Mix all the ingredients
Pour the batter into 2 1lb lined loaf tins for big loafs or 3 slight to smaller loafs until 3 1lbs loaf tins.
Bake for 60-70mins at 180c. Check the loaf with a cake tester to make sure it’s cooked all the way through.
Once cooled slightly, remove from the loaf tin.
Slice the loaf and serve as is or with butter.
