A Italian twist to a traditional quesadilla – its a quick and easy lunch for kids giving them lots of healthy vegetables too.
Pizza sauce ( Tomato Puree, Italian seasoning herbs & water)
Cheese ( Cheddar & Red Leicester)
Chopped Bell Pepper
On half a tortilla wrap, spread pizza sauce and sprinkle some cheese.
Saute the vegetables in olive oil until cooked, and spread over the cheese, sprinkle a little more cheese and fold over.
Place the quesdailla on a heated griddle and occasionally flipping until cooked and brown.
Ensure the cheese has melted within, and cut into 4 pieces & serve.
