Oat Pancakes

Oat Pancakes – as the goodness of the oats which are low GI, protein from the egg and calcium from the almond milk! These are a great sunday morning breakfast.

Ingredients: (Makes 3-4 crepe style pancakes)
30g Oats
100ml unsweetened Almond Milk ( or any milk)
1 Egg

Put all the ingredients into your Vitamix or good high-speed blender. Blend for about 2 mins

Heat a medium shallow fry pan on medium heat and stray with oil. Pour 1/4 of the batter in pan, so that you can swirl and cover the bottom with a thin layer.

Allow to cook for about 30 secs or until almost looking set, and slip it over to cook the other side for about 30sec to a 1min.

Make sure the pancake is cooked both sides and slightly browned, and serve.

Topped with syrup, fruit or sugar! Enjoy!
