These vegan biscuits are so good, that you wouldn’t even be able to tell they are dairy and egg free. The have the same taste and texture, actually I should say the same texture but way better tasting.
BBC Children In Need is a charity for disabled children in the UK. A televised telethon is held in November each year ( usually the middle Friday of the month) on BBC1 and BBC2 from about 7pm-2am with Pudsey Bear the charity mascot.

My son had made some Pudsey Bear cookies last week for his school assignment, using a normal dairy and egg recipe which got me thinking on how I could change this recipe to make it vegan friendly, or should I say Me friendly.
So with a little creative thinking and alternatives I know work best for egg replacements like my trusty vegan buttermilk and baking soda combo. Well in short, it worked brilliantly to the point that the whole family think they actually taste better than regular biscuits.
There is definitely something satisfying about making a recipe work first time without any adjustments or tweaks. This was one of those times, I’m so glad that I don’t loose out to great treats being vegan.
These biscuits were made by my kids, they did the icing which I love about them, they are not perfectly decorated but then gives it the ultimate Children in need feel to them. Who wants perfectly decorated biscuits anyway?
Ingredients
200g Dairy Free Butter
280g Caster Sugar
1/2 Tsp Cinnamon
100ml Unsweetened Almond Milk
1/2 Tsp Vinegar
425g Plain Flour
1/2 Tsp Baking Soda
1/2 Tsp Cream of Tartar
1 Pinch of Salt
Icing Sugar
Food Colours
Instructions
Add dairy free butter and caster to a mixing bowl and beat until light and creamy.
Add ground cinnamon to the mixer and beat for a further 30 seconds.
Add vinegar to the milk and allow to sit for 2 minutes, then pour into the mixer.
Add the flour, baking soda, salt and cream of tartar to the mixer and mix until soft dough forms.
Do not over mix the dough, once all combined then turn out on to a work surface.
Roll out 1/2 of the dough to a few millimetres thick and using a cookie cutter cut out biscuits.
Bake the biscuits for 10-11 minutes at 170c, remove from the oven and allow to cool.
Mix up icing sugar, food colouring and a few drops of water then mix, spoon into piping bags. Make up black, red, yellow, green, blue and white.
Pipe the Pudsey bear face and bandage and they are ready!
