Who doesn’t love a good Rocky Road?! Chocolate, biscuits, cereal, marshmallows and even fruit in a delicious bit of naughtyness.

I’m not going to lie, but these a tiny vegan cheat – I had a small nibble and there were no regrets.

Best thing about Rocky Road is that you can add pretty much anything cereal, biscuit and sweet treats to the bar and make it into your own awesome creation.

This are great to get involved in, as its a no bake bar, and can get messy kids seem to love helping, specially when they get to lick the spoon and bowl afterwards.

To a get a good tasting Rocky road, I would advise to use a good quality dark chocolate. In some cases you can get away with using the cheap stuff, but not for these bad boys.

I think when you add a little dried fruit, you could actually class this as 1 of your 5 a day!

Ingredients
200g Dark Chocolate
25g Butter
Mix of the following 500g
Butter Biscuits
Digestives
Chocolate Chunks or Buttons
Marshmallows
Dried Cranberries
Dried Currants
Rice Krispies
Chocolate Sprinkles

Instructions

Melt dark chocolate and butter in the microwave, heating 20 seconds at a time and stirring in-between.

Add the following into a bowl broken butter biscuits, broken digestives, chocolate chunks or buttons, mini marshmallows, dried cranberries, dried currants and rice krispies. Stir in the chocolate and pour into a greased or lined tray and sprinkle on the chocolate sprinkles, allow to set in the fridge for about 2 hours.

Remove from the fridge and allow to get back to room temperature.

Slice into smaller piecesRocky Road

Store in a air tight container and enjoy.
