Inline with past few posts here is my Oreo inspired cupcake. Chocolate cupcake with a hidden Oreo inside covered with creamy vanilla Oreo frosting.
I decided to try putting in a whole Oreo inside the cupcake, which I thought would be still have the crunch, but like an Oreo ice cream, the biscuit itself goes soft once baked in the oven and covered in cake batter.
Oreos are pretty much a staple in most households now, the dark chocolate biscuit with creamy filling are the little biscuits that kids will generally do anything for, and did you know if buy these biscuits in the US they are vegan friendly however in the UK then still contain diary.
The moment you bite into the these cakes and see the soft Oreo it brings a smile your face, with the inner feeling of excite as if you’ve found hidden treasure! Well that’s the look my kids gave me when they took a bite and shouted ‘mummy mummy there is an Oreo in the cake!’
Ingredients
Cake
100g Margarine
100g Caster Sugar
30g Cocoa Powder
2 Eggs
1 Tsp Vanilla
125g Self Raising Flour
2 Tbsp Milk
1/2 Tsp Baking Powder
12 Full Size Oreo Cookies
Frosting
75g Butter
1 Tsp Vanilla
250g Icing Sugar
6 Full Size Oreos
4 Bags of Oreo Minis
Instructions
To a mixing bowl add the margarine, cocoa and caster sugar and beat until light and fluffy.
Add the eggs, vanilla, flour, milk and baking powder to the bowl and mix on medium speed for 2 minutes.
Add 1/2 a scoop to the muffin case, then drop in a whole regular size Oreo.
Add the remaining 1/2 scoop of batter over the top of the Oreo and bake in the oven at 170c for 20-25 minutes.
Crumbled up 6 Oreos in a blender and beat together the butter, vanilla, icing sugar until light and creamy, then add in the crumbled Oreos to the frosting until thick and creamy.
Pipe the frosting over the cupcakes and top with 2 mini Oreos – enjoy!
