Eggless Sprinkle Vanilla Kitty Cake

My daughter loves a girly sprinkle cake, the coloured flecks in the vanilla just gives her an adorable smile! Specially when you have a fondant kitty smiling on top of the cake. This was pretty much the cake she wanted this year, except she wanted a Persian kitty ( like our family ones) on top….not sure how to make a fondant Persian cat?!

I am so late in posting the blog post, as my daughter’s birthday was back in March! Yes somehow I never got to write this one up, specially since the picture were taken on a different memory card that had hidden in my camera box.

As my daughter had a few kids in the class that did not eat eggs, she wanted an eggless cake for school. Now that I’ve got this eggless malarkey nailed, I’m so confident now with this variation of the cake and now know that it always tends to work. Most of the time people don;t even realise it’s an eggless cake which just makes my day!

Now initially when looking at this cake, I thought the hardest bit would the cat, and the wool would be the easiest…could i have been so wrong! The wool was rather time consuming…trying to roll it out and stick it on just felt endless, I think the wool effect alone took over an hour!

Not sure if you can tell, but this is a pretty big cake. It fed the entire class with left over. I think you could feed a nice big crowd with the recipe below.

Ingredients
Cake:
300ml Milk
1 Tsp Vinegar
200g Butter
350g Caster Sugar
350g Self Raising Flour
1 1/2 Tsp Vanilla
2 Tsp Baking Powder
1 Tsp Baking Soda
2 Tbsp Hundreds and Thousands
Frosting:
100g Butter
300g Icing Sugar
1 Tbsp Milk
1 Tsp Vanilla

Instructions

Eggless Vanilla Kitty Cake

Using the all in one method add the milk, vinegar, butter, caster sugar, self-raising flour, vanilla, baking powder and baking soda and mix well on medium speed for 1-2 minutes.

Add in the hundreds and thousands to the cake batter.

Mix well for a further 30 seconds on medium speed.

Into three greased and floured cake tins equally divide the batter between all three tins and bake in the oven at 170c for approximately 25-30 minutes until baked. Check with a cake tester or skewer by inserting in and see if it comes out clean.

Beat together the butter, vanilla, milk and icing sugar.

Add icing sugar until soft peaks start to hold.

Sandwich together the cakes with a generous layer of butter cream in between.

Then cover the outside of the cake with frosting.

Roll and colour the fondant icing and decorate with fondant cat and wool looking icing.
