Buttermilk Healthy Waffles

After many attempts of trial and error it’s finally got me here, to the best and healthy buttermilk waffle recipe. There is something so good about a fresh buttermilk waffle, soft and warm inside and a slightly crisp outside. Then of course topped with bananas, raspberries, blueberries, strawberries and a dollop of whipped cream then a drizzle with maple syrup.

 These waffles take only minutes to make and super easy, even the kids can help you out, if anything like mine they want to take over only until they have cooked their own waffle, then suddenly it comes back to you to finish the rest of the waffles and the clean up.

The brilliant thing with waffles is that you can add any topping of choice, from fruit, syrup, sauce, jam, ice cream to nothing bit a little butter. Making them so versatile for breakfast or even a quick dessert. Some people in American even have chicken and waffles, so I guess the possibilities are endless! Although my waffle maker is big, so one waffle is enough to fill you up, so you may want to quarter the waffle if you want to try different combinations.

Adding the buttermilk helps keeping the waffles nice, airy and fluffy without needing loads of butter, the tiny bit of oil just helps to make sure that the waffles don’t stick to the waffle iron. When making waffles a good tip is that don’t over mix, you should only whisk enough so that there are no lumps. If you over mix the waffles they  tends  to become dense and though.

As you know me by now, I can’t follow a recipe, I have tried but I tend to look at a recipe and think that if I add this then it will make it nicer or healthier.  I have to make my own adaptations and creations, and this is a spin off of a buttermilk pancake recipe I’ve used before. By adding oat flour and no sugar I think this is as healthy as you can get for waffles. 
Buttermilk Healthy Waffles

Ingredients
200ml Buttermilk or Milk with 1/2 Tsp of Vinegar
1 Tsp Vanilla
2 Eggs
100g Oats
100g Wholewheat Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
2 Tsp Sweetener
2 Tbsp Oil
Toppings of Choice

Instructions

Buttermilk Healthy Waffles

In a large add either buttermilk or milk ( dairy or non dairy) with 1/2 tsp of vinegar and allow to sit for a minute or so.

Add oats to a blender and blitz until you have a oat flour.

Add eggs and vanilla to the milk and whisk lightly.

Add in the flour, oat flour, baking powder, baking soda, oil and sweetener to the bowl

Mix until there are no visible lumps

Heat up a waffle iron and pour on 1/2 cup of batter into the center of the iron, close the iron and then follow the cooking instructions for you waffle iron. With mine, you flip after 10 seconds and within 1-2 minutes the waffle is ready.

Remove the waffle from the iron, then top your waffle with toppings of your choice.
