Carrot & Raisin Vitamix Muffins

I thought I would post a few Vitamix recipes, as I do use my vitamix for a fair few recipes and never think to make any blog posts.

Carrot Raisin Muffins As a friend asked me what I do with my lovely vitamix, here is a muffin recipe that is quick easy and has some great health benefits.

Carrot Raisin MuffinsHealth benefits include energising, immune boosting low cholesterol and high in fiber! Why you could almost call these little gems healthy muffins!   Carrot Raisin Muffins

 

Ingredients:
150ml Oil
150g Caster Sugar
2 Eggs
1 Tsp Mixed Spice
1/2 Tsp Cinnamon Powder
1/2 Tsp Baking Powder
200g Self Raising Flour
100g Peeled Carrots
100g Raisins

In the vitamix blender add the oil and eggsCarrot Raisin Muffins

Then add the sugar, mix slowly working up to high-speed and blend for about a 1 minute. The mixture will become a thick white-ish creamy texture. Pour into a jug and wash out the blender. Carrot Raisin Muffins

Add in peeled and washed carrots.Carrot Raisin Muffins

Turn on the machine and on medium speed until the carrots are finely chopped – should only take about 10 seconds.Carrot Raisin Muffins

Pour back in the creamy egg oil mixture and add flour, spices and baking soda. Briefly mix on low-speed.Carrot Raisin Muffins

Using a spatula mix in the raisins into the batter.Carrot Raisin Muffins

I love the vitamix, as this all took less than 3 minutes, where as traditional carrot muffins take a lot longer as grating carrots is a time-consuming task.Carrot Raisin Muffins

Scoop the mixture into 12 muffin cakes

Carrot Raisin Muffins

Bake in the oven at 180c for about 25-30 minutes and enjoy!
