Roasted Pepper, Onion, Cheese Filo Baskets

A quick easy party food creation. Filo is such a lovely pastry to work with, the added bonus is that it’s probably the healthiest pastry. I do buy the filo pastry, as not sure if could roll the pastry out as thin. These Roasted Red Pepper, Caramelised Onion Cheese Filo Baskets are great for an evening of nibbles and wine!

Ingredients:
1 Tsp Oil
1 Red Onion
1 Red Pepper
100g Cheddar Cheese
25g Melted Butter
Filo Sheets

Chopped the red onions into small pieces. In a small pan, add oil and over medium heat sauté the chopped red onions. Keep stirring occasionally until the onion starts to caramelise and turn a deep dark colour.IMG_5428

Meanwhile heat the oven at 200c and roast the red pepper by slicing into large chunks and place on a baking tray. Spray a little oil and roast for about 15-20 minutes.IMG_5458

Chopped up the peppers and add onions to a bowl.

Roll out the filo pastry and cut into smaller squaresIMG_5461

Spread melted butter on the first  small square and lay a sheet over the top.IMG_5462

Continue to layer the filo sheets on top of each other until you have 4 layers. Do not butter the final sheet.

Spray a mini muffin tin with a little oil, and using a dobber press into the muffin tray to create a basket.

Continue until all the filo pastry have been placed into the muffin tray.

Fill each basket with a spoon of the roasted red pepper, caramelised onion and cheese mixture.

Bake in the oven at 200c for about 10-12 minutes until the filo pastry is golden brown. Serve warm and enjoy!
