Walnut Gluten Free ‘Giant Mug’ Cake

So as you may or may not know – I usually don’t make cakes on order – but a friend of mine asked me so nicely and that she couldn’t find a gluten-free cake she asked if I could make one. The in me was saying NO, however as you can imagine – the polite me said ‘Yes of course’!IMG_5001

I decided to make a gluten-free walnut cake, I had never made this before – so was a complete gamble on if it would work. IMG_5000

I was told she likes walnut cake and loves to drink tea, so I decided to make a giant tea mug complete with a tea bag!IMG_4998

The cake was actually pretty good, moist, great walnut flavour and you couldn’t even tell it was gluten-free.IMG_4997

Ingredients:
4oz Walnuts
8oz Gluten Free Flour
8oz Caster Sugar
4 Eggs
2 Tsp Baking Powder
1 TSp Vanilla
125g Butter

600g Icing Sugar
1 1/2 Tsp Instand Coffee (Dissolved in 1 tsp hot water)
50g Ground Walnuts

Add whole walnuts into a mill jar and grind the walnuts down to crumbs & small piecesIMG_4978

Using the all in one method add the eggs, sugar, flour, walnuts, IMG_4980

Mix the ingredients for about 2 minutes.IMG_4982

Pour batter about 1/3 full to the cake tins baking for about 20 mins at 170c until slightly brown and baked all the way through.

Continue until all the cakes have been baked and allow to cool on a rack.

Add butter and icing sugar and mix at low to medium speedIMG_4985

Add coffee dissolved in a 2 tsp of hot water, milk and ground walnuts.

Add a little more icing sugar if still a little runny.

Add layer of walnut butter cream in between each cake layer and slowly stack up.IMG_4988

Cover the cake with icing ( Dirty Ice)IMG_4989

Roll out a little fondant to make a rim of the mugIMG_4990

Cover the cake with coloured fondant icing IMG_4993

Add theme of choice and enjoy!
