Victoria Sponge

6oz Self raising flour
6oz Margarine
6oz Caster Sugar
3 eggs
1 Tsp vanilla
1 Tsp Baking powder
50g Butter
150g Icing sugar
1 tsp vanilla
2-3 tsp milk
1-2 Tbsp strawberry jam

In a mixing bowl add self-raising flour, margarine, caster Sugar, eggs, tsp vanilla and baking powderIMG_4949

Mix on medium speed for about 2 minutesIMG_4950

Equally divide between 2 greased cake tinsIMG_4964

Bake for 20-25 minutes at 170cIMG_4967

Add remaining butter, icing sugar, vanilla and milk and beat together.IMG_4968

Spread the butter cream frosting over of the cooled cakes


Spread jam on the bottom side of the other cakeIMG_4971

Sandwich together and you have your very easy viccy sponge!
