100g whole-wheat Pasta dry
1 Small onion
1 yellow Pepper
1 Garlic Clove
1 Tsp Basil
1 Tsp Italian herbs
Pinch of salt
Dash of pepper
Tin of chopped tomatoes
Cook the pasta for 8 mins, until almost done. Chop up the vegetables, and sauté in a little oil over medium heat.
Add the herbs and cook until the vegetables are soft.
Add the tin of chopped tomatoes to the vegetable and simmer for about 5 minutes.
Into an oven proof dish drain the pasta and add to the dish.
Pour over the vegetable tomato sauce and stir.
Sprinkle on the cheese and place in the oven at 180c.
Bake for 20-25 minutes, until cheese has melted and browned.
Serve immediately while hot. Enjoy!
