Another Diwali inspired post called Kaju Katli sometimes called Kaju Burfi.

Kaju means cashews in the indian language.

Interest Facts:

The cashew nut is served as a snack or used in recipes, like other nuts, although it is actually a seed. The cashew apple is a fruit, whose pulp can be processed into a sweet, astringent fruit drink or distilled into liqueur.The shell of the cashew nut yields derivatives that can be used in many applications from lubricants to paints, and other parts of the tree have traditionally been used for snake-bites and other folk remedies. Traditionally these are made as below without the chocolate chips but have an edible silver foil over the top.

These are sometimes a little tricky to get right – however I seemed to get a good result my first time.

Ingredients
1/2 Cup of Cashews
1/4 Cup of Sugar
3 Tbsp Water
1 Tbsp Ghee
Chocolate Chips

Measure out a cup of raw cashews into a grinding millIMG_3677 - Copy

Chop and mill the cashews into fine crumb like mixture.

Heat a fry pan with ghee over low to medium heat until melted.IMG_3679 - Copy

Add water and sugar and stir until the sugar dissolves and becomes a syrup

Add the ground cashews into the syrup sugar mixtureIMG_3682 - Copy

Keep stirring until thickens and very wet dough like.

Grease the surface with some ghee, and tip the dough onto the surface to cool. IMG_3686 - Copy

Once its cool enough to work with ( about 8-10 minutes), knead roughly not for too long as the oils of the cashews will surface.

Place the dough on some grease proof paper ( add a little extra ghee or oil if needed)IMG_3689 - Copy

Place another sheet over the top and roll out.IMG_3691 - Copy

Uncover and try to keep it fairly even. IMG_3692 - Copy

Sprinkle on a few chocolate chips and they may start to melt, cover over with the paper again and give in a quick roll to embed in slightly.
