Potato Salad made with Yogurt

Fresh potato salad egg and mayo free but just as creamy as made with fat-free greek style yogurt.

1 Crushed garlic clove
1/2 tsp dried parsley
1/2 tsp dried herbs
pinch of salt
pinch of ground black pepper
Plain fat-free greek style yogurt (200-300mls)
potatoes (4-5 medium/large baby potatoes)


In a small mixing jug, add a crushed garlic clove, dried parsley, dried herbs, salt and pepper.


Stir in the yogurt and mix until fully combined.IMG_8575

Boil, peel and cut the potatoes up into small chunksIMG_8576

Stir in the yogurt mixture and viola! Healthy creamy potato salad with all the fat from the mayo and eggfee for you vegetarians!
