Another new creation time! Breakfast in a muffin! Milk, cereal and ohh egg! why not!
160g plain flour
75g light brown sugar
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1 tbpn lemon juice
50g chocolate chunks
100g mixed cereal
Add all the following into a big bowl plain flour, light brown sugar, baking powder, salt, vanilla, milk, lemon juice, egg
and oil and mix it all together.
Add the dry cereal ( mixture of any cereal such as sugar puffs, malt wheats, bran flakes, coco pops & corn flakes) and stir into the mixture.
Add the chopped chocolate chunks into the mixture. I used some left over Easter eggs.
Equally split into 12 muffin cases
Bake in preheated oven at 170c for approximately 20-25mins until golden brown and cooked through.
Allow to cool or enjoy warm!
They are great as lunch box treats too!
