Its Easter time…and I love seeing all the Easter cup cake recipes! So I decided try something new.
I started with a basic vanilla cup cake
105g Plain Flour
125g Caster Sugar
1/2 tsp Baking Powder
1 tsp vanilla extract
Using the all in one method, mix all the ingredients together in a mixer for about 2 mins.
Once all mixed, scoop into cup cake cases ( made about 11 cupcakes) filling 1/3 of the case.
Bake for about 15-20mins or until golden brown and cake springs back and allow to cool.
Melt 100g of milk chocolate in the micro wave, for 30 seconds at a time, stirring in between until completely melted.
Crush up 1 weetabix in a bowl with your hands.
Stir in the weetabix into the melted chocolate until completely mixed.
Then add a hand full of bran flakes into the melted chocolate weetabix mixture coating all the bran flakes.
If needed add a little more bran flakes.
Spoon a little of the chocolate mixture on each cup cake evenly, and add some micro mini chocolate eggs on top to decorate.
And enjoy a new slightly different twist to the Easter Cup Cakes.
