Roasted Vegetable Soup

Now that I’m back on the weight loss wagon (I hope) here is my quick easy healthy soup lunch.

Ingredients:
Onion chopped
4 Cherry tomatoes cut in half
1/2 Courgette chopped
5 Mushrooms chopped
Green Pepper chopped
Red Chilli chopped
3 Garlic cloves
Sweet Potato peeled and chopped (90g)
100g Quorn Mince
Vegetable Stock
Herbs and Spices ( I used mixed herbs and chilli flakes)

Roast the chopped vegetables in the oven for about 20mins at 200C

Dry fry quorn mince until cooked

Mix up a stock cube with water and add herbs and spices. I used a pinch of chilli flakes and mixed herbs.

Add the stock mixture and vegetables into a blender or Vitamix and pulse quickly until blended but not smooth.

Pour soup into a bowl, and add the cooked quorn mince

Mix together and enjoy hot

If you are following weight watchers then this soup is 4 pro points based on Sweet potato 2 pro points and Quorn Mince is 2 pro points – and is all part of the filling & healthy.Footer
