Pancake Day! Savoury or Sweet?

Yes it’s that time of year – one of my new favourite holidays….PANCAKE DAY!!! Now I’m not religious but I do have a passion for food.

There are 2 types of pancakes in my household, the thin crepe style pancakes and american fluffy thicker pancakes – which is your favourite? Mine and my son is definitely fluffy american pancakes while my husband and daughter love the crepe pancakes.

Basic Crepe Pancake Recipe:

2 Egg
240g Plain Flour
1 tsp salt
600ml milk
Optional 50g caster sugar (for Sweet pancakes)

Whisk or blend together, heat a pancake style shallow fry pan over medium heat with a spray of oil. Add a small ladle full of batter and swirl around the bottom of the pan and cook, until almost set on the top side and flip, continue to cook until brown in colour and cooked.

Basic American style Pancake Recipe

2 Eggs
250g Plain Flour
1 tsp baking powder
1 tsp baking soda
250ml Plain Yogurt
100ml Milk
1 tsp salt
Optional 50g caster sugar (for Sweet pancakes)

Whisk or blend together, heat a pancake style shallow fry pan over medium heat with a spray of oil. Add a ladle full of batter and cook, until almost set on the top side and flip, continue to cook until brown in colour and cooked.

 

Savoury Pancakes

You could probably add anything and everything into a savoury pancake such as potatoes, Quorn pieces, sweet corn, peppers, onions, cheese, mushrooms, courgette…and the list can continue.

I sautéed potatoes, quorn pieces, sweet corn, onions and green peppers until cooked. Add a ladle of american pancake batter, spoon on savoury filling and spoon on another ladle of batter.

IMG_1271Cook until you are able to flip, the top may still be slightly unset, sprinkle with a little cheese. Ensure both sides a brown and cooked and serve.

Sweet Pancakes

Today was the day that my kids had sweet pancakes for dinner and dessert.

I made american pancakes for my son by mixing blueberries, strawberries, raspberries and chocolate buttons into the batter and cooked as above.

Topped off with some maple syrup and whipped canned cream.

For my daughter it was crepe style pancakes cooked as above, once cooked I put in bananas, strawberries, raspberries, blueberries, brown sugar and chocolate buttons then rolled up the pancake and added some maple syrup, then topped with some canned whipped cream
