Protein pancakes with fruit

I think I’ve finally got a good healthy weight watcher friendly recipe ( even works for filling and healthy days)

2 egg whites
2 tbsp skimmed milk
25g USN whey protein powder (strawberry)
10g raw porridge oats
Fresh fruit to top and sugar-free syrup.

Put the egg whites, milk, protein powder and oats in a vitamix (or very good blender) and whizz for a 1 minute or so.

Heat up a small fry pan, spray on a little oil (minimal) and pour on a 3rd of the mixture. Allow to cook for 30-60 seconds and flip cooking on the other side until slightly brown.

Cook the remaining 2 pancakes. They are more of the slightly fluffy kind and on the smaller side about 5inchs round.

Arrange the pancakes on your plate and drizzle with some sugar-free syrup an topped with fruit of your choice, I used banana, raspberry, strawberry and blueberry.
