A slightly varied version of the pampered chef show recipe.
Vegetables ( mix of choice)
Pack of ready rolled puff pastry
Scramble 2 eggs in a fry pan.
Put the eggs to one side, and saute some vegetables ( of choice). I used diced potatoes, peppers, onions, spinach, sweetcorn and courgette. Cook until almost tender.
Roll out the puff pastry and cut into 4 sections. Then slice diagonally across making 8 triangles.
Lay out 4 of the triangle as a cross leaving a gap in the middle meeting all the 2 corners of each triangle.
Lay the other triangles in the middle of the original 4.
Using a scoop or spoon the vegetable and egg mixture around the centre, then sprinkle on the cheese.
Fold over the triangles until it meets in the middle and then snipping off the excess. You can then use the excess pieces to lay over the uncovered sections.
Bake in the oven at 180c for approximately 25-30mins or until the pastry has cooked and browned.
