Mince Pies – The easy way

A delayed Christmas post, but working in finance and year end makes me a busy girl.

These easy peasy flavourful pies are fab at christmas, but this year i ended up taking the easy option and used store bough mince, as it was only the 4 of us this christmas.

Pastry
210g plain flour
70g icing sugar
175g butter -cold
Grated zest of orange and juice
Milk for glazing
Jar of mince meat – Tescos finest

First add the flour, sugar and orange zest into a food processor with the cold butter , pulse a few times, then add orange juice. Continue on low speed until it forms into a dough.

Remove from the food processor and wrap in cling and chill in the fridge for 20-30 mins.

Heat oven at 200c, roll out the dough to 3mm and using a circular cutter cut out 12 based, mold them into the base, spoon in the mince meat mixture.
Roll out again and cut out 12 tops, and cover the pies. I used a fork to prick a few holes in the top.

Glaze with milk and sprinkle on some granulated sugar,
