Blueberry Cake

185g of Butter soften
185g caster sugar
3 eggs
1 tsp vanilla
225g self rising flour
2 tsp baking powder
140ml sour cream
125g blueberries

Cream together butter and sugar, then add eggs slowly. Add remaining except blueberries and mix for about 2 minutes.
Slowly hand stir in the blueberries and pour into a cake 8inch cake tin.

Bake at 170c for about 30-40mins, until springs back or test with a cake tester.

Then begin with the frosting.

Cream Cheese Frosting
65g cream cheese
25g soften butter
150g icing sugar

Butter together the butter and cream cheese until combined, slowly add icing sugar and do over beat.

Spread over the cake and sprinkle on a few blueberries
