Christmas Cake

Homemade small Christmas Cake –

For the last 2-3 years I’ve been making homemade Christmas for two reasons. Firstly my husband is not a fan of marzipan and secondly I enjoying making my own Christmas cake.

I’ve been using Mary Berry’s recipe as a base using my own variation and this year as it was just for the hubster I made 1/4 of the recipe. If making a full size one please times the below ingredients by 4.

Ingredients
2.5oz currents
1.3 oz sultanas
1.3 oz raisins
1oz glacé cherries
1 oz apricots
0.5oz candied peel
1 tbsp brandy
1/8 tsp of nutmeg
1/8 tsp mixed spice
2oz margarine
2oz dark brown muscovado sugar
1 egg
0.5 oz chopped nuts
1/2 tbsp of golden syrup
1/2 orange zest
1/2 lemon zest

Put all the fruits and brandy in a bowl, mix and leave overnight.

Add all remaining ingredients into a bowl and mix then fold in the fruits. As I had a small cake I used a 1/2 loaf tin double lined with baking paper and bake in the oven at 140c for about 3hr 15mins to 3hr 30mins

Allowed to cool and remove from the tin. Place in a air tight container and pierce with a skewer, feed with a little brandy every 3-4 days.

A few days before Christmas cover the cake with some fruit jam (orange or apricot) and roll out some fondant and cover. You can use marzipan prior to the fondant if you wish.
