Red Velvet and White Chocolate Cookies

hmmmmm Red Velvet….Don’t you just love it?! The slightly weird chocolately taste and the deep colour! The Red Velvet Cake is probably my favourite cake. My little Cousin sister had been bugging for the last 3 years to make the red velvet cookies, she even bought my a sample for Canada to try….so a week ago I felt brave to try them – however it was a rather epic fail..they didnt spread out like they should, were very red and too chocolately! So attempt number 2 was definitely 100% better!

Ingredients:

4oz Butter (softened)

8oz Caster Sugar

1 tsp White Vinegar

Egg

1 tsp Vanilla

1 1/2 tsp Red Food Colour

12oz Plain Flour

40g Cocoa

1 tsp Corn starch

3/4 tsp Baking Powder

1/4 tsp salt

100g White Chocolate roughly chopped

 

Preheat oven at 190c.

In a mixer with paddle attachment, mix butter and sugar together, then add vinegar until combined, add egg until combined, add vanilla until combined and food colouring until combined.

Measure and add all remaining dry ingredients except chocolate and mix well. Add stir in the chocolate and using a small scoop add 12 dollops onto a grease baking sheet.
