Weetabix Oat Raisin Chocolate Cookies

Yes I’m currently on study leave but after a massive group consolidation question i needed a quick break and much needed coffee, so walking past the oven I had a light bulb moment and though I’d do some baking…(Hubster not going to happy as trying to loose a few lbs). So here is my latest creation
weetabix oat cookies
130g Margarine
80g Light brown sugar
80g dark brown sugar
1 egg
4 Weetabix
45g plain flour
125g oats
75g muesli
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
110g raisins
75g dark chocolate chopped

Heat oven at 170c (Fan Oven – usually about additional 10ish degrees for conventional)

Cream together sugar and margarine, add egg and then mix in all the rest.

USing a small Ice cream scoop dollop a scoop full on a baking tray ( grease tray is normal one – I use pamperef chef Flat stone  )

Bake for 12mins ( if your first time making cookies, bake for 8mins and check every 2 mins after to get the right time.)

Cool for 2 mins and then move them to a cooling rack and enjoy!!

these are soft but have a lovely crunch at the same time.Footer
